Brewer's Notes: This is actually a bit of a disaster batch. Much like All About That Base, this beer was designed to try out a new malt and really get behind the flavor of it. Unfortunately, that was the day that the burner fell off of our kettle.
Now, here's the thing: When beer gets boiled you're doing three things: 1) You're killing off any bacteria or mold that might be present in your water. 2) You're creating bitterness through the isomerization of your hops. 3) You're driving off volatile off-flavors (particularly DMS). The burner fell off before we got to 180F, or even before we put hops in. It ultimately took us almost a week to get the burner repaired.
In an effort to save the batch, we immediately put it into whirlpool with a bunch of hops (which are anti-bacterial!) and then cooled it and put it into barrels where we inoculated it with our house strain of Brett.
No joke: It took a while to come around, but come around it did, to what ended up being a really funky, pineappley, grainy, tart beer that is worth going back to again and again.
As much as raw beer is something that adventurous homebrewers try from time to time, I wouldn't try this one at home.
