Brewer's Notes: We made this beer to celebrate the Eno River and the Eno River Association's 50th Anniversary.
The idea was to make a beer using ingredients that are found on the banks of the Eno River. Friends brought us some freshly dropped persimmons, and we picked branches and leaves from spicebush on the banks of the Eno ourselves (a challenge after the flooding from Hurricane Matthew!). Finally, we brewed this beer using yeast we harvested off of a North Carolina grown muscadine grape. It's an incredibly local beer.
The flavor is bright and fruity with notes of citrus, dried apricot, allspice, and the unmistakable bitterness of persimmon underlying it all. Overall, beautiful and elegant, like the Eno River itself.
