Brewer's Notes: This beer has had a long and varied life. When we originally brewed it, we made it in preparation of the Pittsboro Pepper Festival, which is - quite seriously - one of the most fun events we take part in. When we first made it, we were given pounds and pounds of Tobago peppers, and so it was a delicious, light, fruity - and not very spicy - beer, made with our house saison yeast.
When we brought it back, we did so because we had a huge bumper crop of habaneros on our pub's patio: hundreds and hundreds of peppers. We've since made it with three different yeasts, all to great effect.
This beer is now hot. Real hot. And super tasty. The malt base is designed to be light and fairly crisp, with a little bit of residual sweetness. The hops are designed to be background and compliment the peppers. We try to use an yeast with high attenuation to keep the body light.
We don't keep this beer on tap at our pub, but you can find it around the marketplace, most especially at our good neighbors at Hillsborough BBQ.
Weirdly, we've made this one novella more than any other. It's probably the closest thing to a non-flagship flagship that we've created.
