Brewer's Notes: When we agreed to host a fundraiser at the brewery for Little Green Pig Theatrical Concern, the next question was obvious: Can we make a beer for it?
I asked them about what kind of things that they like, expecting something about food or drink, and what they said was, "We're really into Baton Francais," otherwise known as Canne de Combat. So, I decided that a French beer was in order.
Cards on the table, there are very few commercial Biere de Gardes that I've really enjoyed drinking. So, I thought that I would take that particular challenge, do some research, and see what I could come up with.
As our own twist, I used our house saison yeast, which really creates more fruit character than you would expect in a classic version of the style, and in this case creates a big stone fruit/pineapple overtone, but the result is outstanding. We used a traditional malt base that goes heavy on biscuity, nutty malts, sugar for a crisp finish, and a non-intrusive hop character.
